Ingredients of Kanji
- For Kanji – Water – 2 liters
- Rai – 4 tbsp (finely ground)
- Turmeric – 1 tsp red
- Chili powder – 1 tsp
- Asafoetida – half a pinch
- Mustard oil – 2 tsp
- salt – as per taste

- Moong Dal – 1 cup (soaked)
- salt – as per taste
- Asafoetida – half a pinch

How to make Kanji (Kanji Vada Kaise Banate Hain)
1- Wash the glass container thoroughly and dry it in the sun. After this, put pre-ground mustard seeds, turmeric powder, red chili powder, asafoetida, salt and mustard oil in it. Along with this, add water to it as well.
2- Now mix these spices with a spoon for 5 minutes. Add the rest of the water and mix it. Close the glass box. Keep it at a warm place and stir it daily with a spoon. Kanji will turn sour in 3 to 4 days.
How to make Kanji Vada
1- To make Kanji Vada, wash and clean the lentils thoroughly with water. Now keep this dal soaked in water for at least 4 hours so that the dal swells well. Later remove the extra water from the dal.
2- Now put the dal in the mixie and grind it coarsely. When the dal is crushed, take it out in a vessel. Grind the rest of the lentils in the same way. When all the lentils are ground, add salt and asafoetida to it and mix well. While mixing it with a spoon, beat it for at least 5 minutes.
3- Beat the dal until it starts to look puffy, now add oil to the pan and offer it. Now take the mixture of vada in hand and put it in the pan and fry it. When it gets fried well on both the sides, take it out of the pan.
4- Fry all the vadas like this and take them out. Now put these vadas in the already prepared kanji and leave them for at least half an hour. After this, when the vadas are well puffed in kanji, then take it out in a serving bowl and serve it to the guests.
